French Apple Cake
Ingredients
- 3/4 cup granulated sugar, plus more for the top of the cake
- 1/2 cup unsalted butter
- 2 eggs
- 1/4 tsp almond extract
- 1 tsp vanilla extract
- 5 tbsp whole milk (2% milk is OK too)
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 2 apples (honeycrisp, fuji, granny smith - or a mix of these), peeled, cored, and cut into small cubes

Instructions
- Preheat the oven to 350°F. Spray a 9-inch cake pan with baking spray.
- In the bowl of a stand mixer, add the granulated sugar and unsalted butter. Beat for a minute until light and fluffy.
- Add in the eggs, followed by almond extract, vanilla extract, and milk. Mix until the eggs have been broken up and mixed in; batter will be lumpy, it's OK. Stop to scrape the bowl halfway into mixing.
- Add the flour, baking powder, salt, and ground cinnamon. Mix the batter on medium speed just until everything is mixed together.
- Use a spatula to scrape the bottom of the mixing bowl to incorporate any unmixed batter. Then give everything a quick mix again. Stir in the cubed apples with your spatula.
- Pour the batter out into your prepared cake pan doing your best to make sure the batter is evenly distributed in the pan. It won't look smooth on top but the batter should be evenly distributed throughout the pan. Sprinkle granulated sugar all over the top.
- Bake the cake for approximately 40 to 45 minutes. The cake should be set with a toothpick inserted in the center coming out clean. Let the cake cool in the pan for about 20 minutes before attempting to flip it out (if you want to serve it in something else).
